  • 240g wholemeal flour
  • 400g caster sugar
  • 1 tablespoon baking powder
  • 2 teaspoons bicarbonate of soda
  • 4 eggs, beaten
  • 500g pumpkin puree
  • 2 teaspoons salt
  • 225g unsalted butter, softened

  1. Butter two 23x13cm loaf tins. Preheat oven to 180 C / Gas 4. Place oven rack in lower 1/3 of oven.
  2. In a large bowl, combine the white flour, wholemeal flour, sugar, baking powder and bicarbonate of soda. Mix well.
  3. In a separate bowl, combine the pumpkin puree, eggs and salt. Add to flour mixture and blend in softened butter one tablespoon at a time.
  4. Divide mixture between 2 tins. Bake until golden and skewer comes out clean, about 45 minutes. Invert onto racks and cool.

please dont make this...there are much better pumpkin bread recipes on this site...but if you do not heed my warning and decide to make it...please at least add a teaspoon or so each of cinnamon, ginger, or nutmeg, and possibly cloves and vanilla. w/o these this bread will be very bland.-11 Dec 2001

I made this for Ibby's Pumpkin Mushroom Stuffing and it was perfect for that. However if I was just having it for a pumpkin bread I've had better. I added extra cinnamon and it still lacked flavor. But for the stuffing it was wonderful.-04 Dec 2007

Healthy Pumpkin Bread

Healthy as is WHOLESOME! This quick bread recipe is made with the simplest ingredients and so flavorful and filling.

WHAT MAKES THIS QUICK BREAD GOOD FOR YOU?

  • Gluten Free Rolled Oats – Rich in B Vitamins and soluble fiber
  • Gluten Free 1:1 Flour. I like use Bob’s Redmill Brand
  • Maple syrup and/or raw sugar – Unrefined sugars have nutrients! Maple syrup is also a great
  • Canned Pumpkin (pumpkin puree) – Fiber filled, rich in vitamin A, and did you know it’s great for IBS? Maybe that’s a story for another day. Haha!
  • Eggs – Rich in Choline and protein.
  • Cinnamon – Helps with digestion and obviously, FLAVOR! A soothing spice with anti-inflammatory properties.
  • And my secret weapon ingredient – unsulphured MOLASSES! Molasses is another unrefined sugar that add a robust flavor as well as plant based iron. I just love that!

This is the perfect choice for QUICK wholesome breakfast fuel. Especially if the weather is fall-like and a bit chilly. When you need ALL of the morning energy, like I do! Plus, it also packs perfectly into a lunch box or backpack for afternoon snacking. Breakfast, snack, or dessert, you choose!

Here is my favorite pumpkin bread recipe I made this week. It’s superfood seasonal bread that’s lightly sweet, soft, delicious, dairy free, easy to make, and DIVINE!

Excuse my run on sentence and let’s get baking! Step by step video below.

Prep the Dry Ingredients

  1. Place your oats in a blender or coffee grinder and blend until a fine flour is formed.
  2. Place the oat flour and gluten free flour in a large bowl and whisk together. Then add the remaining dry ingredients baking soda, and salt. Set aside.

Prep the Wet Ingredients

COMBINE and let it SHINE! In the oven that is.

  1. Combine the wet batter in with the dry ingredients. Fold in the pumpkin puree, molasses, vanilla, and vinegar. Gently stir until batter is well combined.
  2. Pour batter into a lined 8吇 bread pan. Sprinkle a few tablespoons of rolled oats and nuts/seed on top.
  3. Bake at 350 F on center rack for about 30 minutes. After 30 minutes, rotate pan, cover with foil, and bake and addition 10-15 minutes or until center of the bread comes out clean with a toothpick.
  4. Remove from oven and let cool OR drizzle sugar free vegan sweetened condensed milk on top and eat it hot out of the oven. My personal favorite. Just sayin.

SERVING AND STORAGE

I highly doubt that you will need to store this for long, but should the need arise, store it in an airtight container.

  • Use a high quality flour blend. I've tested this recipe with Ryze, my homemade flour blend, and Bob's Red Mill 1-to-1 Gluten-Free Flour Blend.
  • When measuring the flour, spoon the flour into the measuring cup, then level. Never scoop your measuring cup into the flour, it add too much flour.
  • Use pumpkin puree, not pumpkin pie filling.
  • You can use a regular milk, or dairy-free milk in this recipe.

If you are looking for a quick gluten-free pumpkin bread mix to keep on hand, you can either stir the dry ingredients for this gluten-free pumpkin bread recipe and store it for future use or you can purchase a store bought gluten-free pumpkin bread mix.


Instructions

Preheat oven to 350˚F. Mix flour, baking soda and salt in large bowl. Beat eggs in medium bowl. Stir in sugar, pumpkin, oil and pumpkin pie spice blend extract. Add to flour mixture stir just until moistened. Stir in 1/2 cup of the pecans.

Pour into greased and floured 9x5-inch loaf pan. Sprinkle with remaining 1/4 cup pecans.

1- 3 ⁄ 4 cup all-purpose flour

1 cup Truvía ® Brown Sugar Blend, packed

1- 1 ⁄ 4 cup canned pumpkin

1 ⁄ 2 teaspoon vanilla extract

1 ⁄ 2 cup finely chopped dates, optional

1 ⁄ 3 cup shelled pepita seeds

Directions

Preheat the oven to 350 ° F with a rack in the center position.

Grease a 5” x 9” loaf pan with non-stick cooking spray, set aside.

Combine the flour, Truvía ® Brown Sugar Blend, baking soda, baking powder, salt, cinnamon, nutmeg and clove in a large mixing bowl and whisk to combine.

In a pot, or in the microwave, gently melt the butter with the milk. Pour the butter and milk into a second large mixing bowl. Whisk the pumpkin, eggs, and vanilla into the milk mixture. Once combined, pour the pumpkin mixture into the flour mixture. Whisk until thoroughly combined.

If using dates, fold in the chopped dates at this point. Transfer the batter to the prepared loaf pan. Sprinkle the pepita seeds on top of the pumpkin bread and bake for 40 minutes.

After 40 minutes, carefully tent a piece of aluminum foil over the pumpkin bread, to prevent the pepita seeds from becoming too toasted. Rotate the loaf pan, front to back, to ensure even baking. Continue to bake with the foil tented on top, for an additional 30 minutes, or until a knife inserted into the center comes out clean.

Remove the loaf from the oven and cool in the pan for several hours. Once the loaf pan has cooled sufficiently for you to touch it, remove the pumpkin bread from the loaf pan and continue to cool for two hours before slicing.

Serve the pumpkin bread at room temperature. Leftovers can be stored, tightly wrapped, at room temperature for two days, or refrigerated for up to five days.
