Chef Gabe Thompson honors his Texas roots with a special brunch pop-up
In case you were wondering, there will be Frito pie.
This weekend, March 28 and 29, executive chef Gabe Thompson will host a special brunch in honor of the Tex-Mex pop-up that won Team L’Apicio a spot in the finals on Bravo’s Best New Restaurant.
Though Thompson is better known at L’Apicio for modern Italian cuisine, the chef is seizing this chance to tap into his Texas roots and highlight the culinary career that began in Austin and drew heavily from the border states between the United States and Mexico.
This weekend, L’Apicio will serve a brunch menu that includes breakfast tacos, migas (tortilla strips, onion, chilies, tomato with jack cheese, served with beans, rice and tortillas), and chicken fried steak with chorizo, gravy, and a pepperjack biscuit. Best of all, Thompson will present the pinnacle of portable food: Frito pie.
For dessert, diners can choose between tres leches cake or chocolate pecan pie.
